Ingredients

Dry Fruits & Nuts

  • 1 cup soft dates (seedless) – about 200g
  • ¼ cup raisins
  • ¼ cup dried figs (anjeer), chopped

Nuts

  • ½ cup almonds
  • ½ cup walnuts
  • ¼ cup cashews

Seeds

  • 2 tbsp white sesame seeds
  • 1 tbsp pumpkin seeds
  • 1 tbsp flaxseeds (optional)

Flavor Enhancers

  • ½ tsp cardamom powder
  • 1 tsp desi ghee


Step-by-Step Method

Step 1: Roast the Nuts

  • Heat a pan on low flame.
  • Dry roast almonds, walnuts, and cashews for 3–4 minutes until aromatic.
  • Allow them to cool completely.

Step 2: Roast the Seeds

  • In the same pan, roast sesame seeds, pumpkin seeds, and flaxseeds for 1–2 minutes.
  • Remove and cool.

Step 3: Blend the Nuts

  • Add the roasted nuts to a mixer.
  • Pulse briefly to get a coarse texture.
  • Avoid making a fine powder; some crunch is desirable.

Step 4: Process the Dates

  • Add dates, raisins, and chopped figs to the mixer.
  • Blend until they form a sticky mixture.


Step 5: Combine Everything

  • Transfer the nut mixture and dry fruit mixture to a pan.
  • Add roasted seeds, cardamom powder, and 1 tsp ghee.
  • Cook on low heat for 2–3 minutes while mixing well.

Step 6: Shape the Laddoos

  • Allow the mixture to cool slightly.
  • Grease your palms with a little ghee.
  • Roll into bite-sized laddoos.
